What I mean is “eat out” as in restaurants, not like “eat out” as in eating ice cream outside while hiding from the kids type of eating out. Or eating out as in shoving a granola bar down your throat as you hurdle kids into the car because you’re running late and didn’t have time for breakfast.

I digress.

We use to eat at Applebee’s on occasion. My favorite thing from there was the Fiesta Lime Chicken. That was what I ordered every single time!

Well, we haven’t eaten there in years. I don’t even know if they still serve it, but I can’t imagine why not. I believe it was pretty popular.

Recently I somehow managed to accidentally recreate this dish at home.

I’m ridiculously proud of myself because I really did recreate this all by myself. No Pinterest inspiration or anything!

It all started when I found these Santa Fe Style Tortilla Strips from Aldi. I have no idea if you can find anything similar at other grocery stores (I’ve never seen them before). They automatically reminded me of Fiesta Lime Chicken.

At this point, the idea hadn’t occurred to me yet to make this recipe, but I really wanted to try these.

On an unrelated note, (or maybe it is very much related…*evil laugh*) one of my new obsessions was eating carrots and other fresh vegetables with fiesta ranch dip. This is a dry mix that you mix with a tub of sour cream. It is sogood!!!!!!!!!It actually got me eating veggies.

One day I had some chicken breast in the kitchen that need to be cooked and this version of Fiesta Lime Chicken came into existence!
First, you need to cook your chicken breast in a skillet with butter and taco seasoning.

  • 3 fresh chicken breast
  • Half a stick of butter
  • Taco seasoning–from a packet or make your own.I made my own.

Here is how I assembled this meal:

  • Put a pile of the Santa Fe Strips on a plate.
  • Add a dollop of the Fiesta Ranch.
  • Add your cooked chicken breast.
  • Add shredded cheddar cheese.
  • More Fiesta Ranch.
  • Top with a squeeze of lime and fresh cilantro.

Serve with Spanish Rice! You can make it from a box mix or make your own! I made my own!

P.S. Add lots of cilantro!!Yummm

One other thing that you could add–that I didn’t but I really, really wished I would have thought of— is pico de gallo.

Ingredients

  • 3 cooked chicken breasts
  • Half a stick of butter
  • Taco seasoning--from a packet or make your own.
  • Santa Fe Strips
  • Fiesta Ranch packet
  • 8 oz. Sour Cream
  • Cheddar Cheese
  • Lime
  • Cilantro
  • Spanish Rice

Instructions

  1. Mix the Fiesta Ranch packet with the sour cream.
  2. Put a pile of the Santa Fe Strips on plate.
  3. Add a dollop of the Fiesta Ranch.
  4. Add your cooked chicken breast.
  5. Add shredded cheddar cheese.
  6. More Fiesta Ranch.
  7. Top with a squeeze of lime juice and fresh cilantro.
  8. Serve with Spanish Rice! You can make it from a box mix or make your own!

I hope you enjoyed this homemade Fiesta Lime Chicken as much as I did! This would be great for an at-home date night! Yay! Saving money!!

    I don't typically leave comments, but I had to comment on this recipe! It was SOOO good! Tastes exactly like Applebees fiesta lime chicken, if not better! And the hardest part was just cooking the chicken. This will be a regular in my household!
